Hawaiian Wedding Cake

Cake

  • ½ cup brown sugar
  • 1 tsp baking powder
  • 2 cups flour
  • 2 eggs
  • 1(20 ounce) can crushed pineapple with juice
  • 1 cup chopped walnuts
  • ¾ cup coconut
  • 1 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1 tsp salt
  • 1 tsp vanilla

Frosting

  • 1 (8 ounce) package cream cheese (room temperature)
  • 1 cup white sugar
  • 1/8 tsp vanilla extract
  • 1 ½ cup heavy whipping cream

Directions:

Cake: Combine all ingredients. Bake cake at 350 degrees F for 35- 40 minutes. Bake in a well-greased 9×13. Cool before frosting.

Frosting: In a small bowl beat together the frosting ingredients listed above. Frost cake and enjoy!
